Vegetable soup

This week you will be making a homemade soup which is low in sugar but high in flavour. The vegetables that you use can be altered to taste, but onion always adds good flavour, and the potato acts as the thickener, so both of these vegetables  are useful to include. You are using stock cube to provide flavour - these can be high in salt, so use a low-sodium variety if you are concerned.

Top Tips!

- You can customise the soup by changing the vegetables and the flavour of the stock cube.

- Potato should be included as it is a starchy vegetable that acts as a thickener for the soup.

-  Onion is a good vegetable to use as it is highly favoured. Alternatively, leek, shallot or spring onions could be used.

- Vegetables need to be chopped to a similar size to ensure that they cook fully and evenly.

- Add just enough stock to cover the vegetables or the soup will be too thin. 

- Test the vegetables are soft by squashing one on the side of the saucepan - ensure you test the hardest vegetables, for example, carrot. 

- This soup can be blended or left as a chunky soup.
