This week we will be concentrating on the aesthetics of a dish to produce - mosaic sushi. This phenomenon has become popular on Instagram and other social media sites in the past few years. It is more complex than making a regular roll of sushi as you have to visualise the pattern you want to achieve before rolling it up.

Top Tips
- Watch the videos several times before the lesson, and before construction, so that you are confident that you can visualise the final result.
- Use sushi rice as it has a high starch content that ensures the roll sticks together sufficiently (even though it has been washed).
- Choose fillings that are easy to slice - cucumber, peppers, crab sticks, etc.
- If you want, you can add food colouring to the rice to give a fun, coloured appearance.
