Banoffee pie


Today I made a delicious banoffe pie.

Even though I didn’t have to bake anything it took a long time to complete.

Firstly add 25g butter to a hot pan and melt it.Next crush some digestives in a bag and pour in the butter.Mix until smooth but crumbly mixture is made and put in a tin (or the thing you wish to serve it in).After that make the base even and and leave to chill in the fridge overnight.Pour sweetened condensed milk and 75g of dark muscavado sugar into a pan ,turn up heat to medium.Make sure to stir frequently! After a fudge consistency has formed remove from heat and spread evenly across the base (digestives and butter).Leave in the fridge to set for 1hour. Next cut up some bananas into slices and evenly layer across your fudge.Heat a pan and add sugar and water to make a sugar glazing (this will prevent the bananas from turning brown . This wasn’t in the recipe I added it myself but you can also do it if you wish to ) pour over the glazing whilst still hot then leave to cool before putting in the fridge.After that take some double cream and add a tsp of instant coffee powder and a tablespoon of sugar.Take an electric whisk and beat until smooth but strong enough to hold its shape.Spread across the banana layer and crumble a little digestive on the top.Now your ready to serve your banoffee pie.
