My leek and potato soup

I started by chopping up my leeks into disks and my potatoes into medium sized cubes. I then sweated off my leeks in a pan with a small amount of oil to soften them and make them easier to blend later. I let them soften for around five minutes until they turned slightly translucent before adding in my cubed potatoes. I stirred the leeks and the potato together, then added just enough stock to cover my vegetables. I let them simmer for thirty minutes to absorb the maximum about of flavour that they could.  Next, I blended my vegetables to turn them to a soup consistency.

    1. I pressed the potato against the side of the sauce pan and when it was able to crush easily, I knew it was cooked.
