My risotto was poorly made. I know this because it was a watery, sloppy, uncooked mess. The flavour was nice but the texture was crunchy and gross. Overall it was not my best dish.
However, when I got home and got the risotto ready for dinner it started to look nice. And my sister Florrie ate it so it must have tasted very good.

This is a shame Rosie - I don't know why your risotto took so long to cook. Maybe the Quorn pieces had absorbed some of the liquid? Why does the risotto go 'creamy'?

Because the starch goes creamy and risotto rice has lots of starch.
